Crowd-Pleasing Recipe: Cottage Pie




This is a great recipe for entertaining, gifting new Mums or other loved ones,

or just to enjoy yourself at home!


Best served with a seasonal side salad for extra nutrients.

Ingredients

Makes enough for a 23cms x 33cms dish

- 1 tbs extra virgin olive oil or coconut oil

- 1 onion, diced

- 500g premium beef mince, or regular beef mince with fat drained

- 2 carrots, grated

- 2 cups mushrooms, sliced

- 1 can crushed tomatoes

- 1 cup beef stock

- 2 tbs Watties tomato sauce

- 1 tbs soy sauce

- 1 tsp Worcester sauce

- 2 tbs Merlot red wine

- 1 tsp mixed herbs or oregano, thyme or sage

- Salt and pepper, to taste

- 6-8 potatoes, cubed

- 1 tbs butter

- 2 tbs cream

- 1 cup Colby cheese, grated

Method

  1. Preheat the oven to 180ºC

  2. Fry the onion in oil on medium-high in a big pan until soft, about 2 mins

  3. Add the mince and cook until just brown, stirring. If needed, drain the extra fat

  4. Add the carrots and vegetables and stir for another 1-2 mins

  5. Reduce the heat to medium and add the canned tomatoes, stock, sauces, red wine and herbs. Bring to a simmer and leave uncovered

  6. While you wait for the mince to thicken, bring the potatoes to a boil in some salted water. When they become soft, drain the water from them and mash with the butter. Slowly add the cream to reach the desired consistency. Top up with milk if needed

  7. Once the mince is nearly thickened, add the salt and pepper to taste, and adjust with other sauces or herbs if needed. (For more sweetness, add more Watties tomato sauce. For more depth of flavour, add soy and Worcester sauce. If it's quite bland still, add more herbs and salt)

  8. Layer the mince at the bottom of your baking dish, then the mashed potato, and top with the cheese

  9. If you are gifting the dish, bake in the oven just until the cheese is set, about 10 minutes. Then they can heat it up in the oven for another 10 minutes at a later time. If you are eating it now, bake in the oven until golden, about 15 minutes
